AOKI Brewery
Aoki Shuzo is a brewery with a rich legacy of sake making that spans over three centuries. Established in 1717, it is now run by Takafumi Aoki, the 12th generation heir of the founder. The brewery is situated in Shiozawa, a part of the renowned Uonuma region that boasts the finest well water in the area. Aoki Shuzo adheres to the traditional practice of brewing sake only in the cold season, using the natural low temperatures to control fermentation. The brewery’s philosophy is based on the concept of “Wago”, which means the harmony of everyone involved in the sake’s journey. From the “producers” such as the brewers and the rice growers, to the “sellers” like the liquor stores and the restaurants, to the “drinkers” who enjoy the taste of Kakurei, Aoki Shuzo believes that Wago is what makes the best sake. Wago reflects the spirit of the people of Niigata, who have learned to endure and cooperate through the long and sometimes harsh winters that the region is known for.
